INTRODUCTION TO COFFEE

Program

  1. A short trip through the world of coffee: origin (places and botanical summary) – Production (types of cultivation, harvesting methods, beans cleaning processes)
  2. Classification of the green coffee (major defects, summary of decaffeination, shape and colour of the beans)
  3. Major differences between Arabica coffee and Canephora coffee (Robusta) in the botanic world and in the cup
  4. Analysis and costs of the different harvesting methods (picking and stripping), because the coffee is natural or washed
  5. Influence of the defects in the price of raw coffee. Importance of the cupping to evaluate the purchase of the coffee beans
  6. Different extraction methods for drip coffee (Chemex, V60, Syphon, French Press, Aeropress, Cold Brew, Moka)
  7. Tasting of drip coffee, notes on the right and wrong criteria for extraction
  8. Comparison and evaluation

Where we are
Our headquarters are in Ventimiglia, in Ponente Ligure (Prov. IM) near the border with the Côte d'Azur and the Piedmont Region (Prov. CN)
 
Vision
Inspired by the Third Wave Coffee movement we love quality coffee extracted professionally, be it espresso or drip.
We wish to promote the culture that revolves around the coffee supply chain so the consumer can enjoy a unique experience (too often ignored) associated with this extraordinary agricultural product.

Certificate of attendance
We issue certificates of attendance, preparing our students - for the job of barista (coffee shop) - roaster, by empowering them professionally in the role they intend to play.

Handouts for the course
The course will be complemented by educational handouts on the entire supply chain of the coffee world available to the students.
We will also perform practical tests: coffee extraction with highly professional equipment and testing of coffee roasting with the help of a laboratory roaster.

Timetable
Course from 9.30 to 13.00 and from 14.00 to 17.30. 
 
Nights
We have agreements with tourist accommodation facilities for those who come from outside the Imperia Province.

Deposit: by bank transfer is required when you register.
Payment: by bank transfer in advance or on-site at the beginning of the course

SCAE course
After the three days you can access the exam preparation to get the SCAE certification (6 modules, 3 levels, 1 diploma), with an AST authorised trainer.
